Got a recipe for breakfast? I'm taking submissions for a contest. No, I'm not entering a cooking competition, just trying to put a little "umph" in the morning sequence. One of my goals for this year is to try 27 new reicpes, any category. I usually try dinner ones first. But I have to push myself to make breakfast more creative for my family. So, please submit! It can be cooked, baked, blendered (as in, it can be a blender drink), toasted, or doesn't have to be heated at all. Sometimes just a new twist on an old thing (like putting Brummel and Brown's berry cream cheese type spread on a New York bagel. That was a new one from Sandy Browne --with an "e," no relation to the food manufacturer--when we visited.)

You already have my favorite breakfast recipe: baked oatmeal. Do you still have that? I just made it again this week.
I have a couple other yummy ones, but can't decide which one to give you. Would you rather have:
a quick bread recipe
a belgium waffle recipe
cheesy egg puffs (w/mushrooms) OR
Do AHead Brunch Bake (w/ hashbrowns, ham and cheese)??

Here's some quick ideas:
Breakfast sandwhiches: Way better than MacDonalds, toast an English muffin, add egg, sausage, and cheese and hmm hmm good.
Cream of Wheat: I LOVE Cream of Wheat and have my whole life. Microwave yourself some (with milk, not water) and add mashed banana and brown sugar or maple syrup. I love it!
And Briana's baked oatmeal is to die for!
Zo, we're going to Helping Up Mission. I'll tell you about it when we go. Also, make sure you tell us how visiting the neighbors and taking cookies goes!

my current favorite breakfast one is a super-easy egg casserole. I've made it for women's brunches a couple of times and always get rave reviews. it's even relatively healthy, esp. if you use reduced fat sour cream, skim milk and 2% milk cheese (which I do). I also mix in all the cheese rather than saving some to put on top--saves a step. here's the link:

Whoa! They all sound great. Bri, I meant to say that your Baked Apple Oatmeal made my "Best of 2006 in the Breakast Category." :) As for the choice you just gave me, the puffs with 'shrooms! I can't do dairy but 2x/month and even then I pay for it.
Danielle, Cream of Wheat can't be beat. My dad makes it as a special treat when the kids spend the night. They call it "Pappaw's Cream of Wheat." Nothing special about the way he makes it, just THAT he makes it and they love each other! Let me know what age group and gender you think Helping Up is okay for. I'm thinking of taking my teenaged kids but need wisdom.
Amy, do post your bran muffin recipe. I'm afraid I couldn't handle the casserole, even tho' I'm sure I'd love it. I've become lactose intolerant in the past couple years, and cutting it out for this DAniel Diet has made me feel sooooooo much better. Besides, I love bran. It reminds me of my days in the barn. SEe, transpose one letter in bran and you got "barn." Call 'em Barn Muffins and I'm all over them!
ooh, how sad about the no dairy! my husband would die...I can't even tell you how many bags of shredded cheese we go through a week :)
here's the "barn" muffins :) it makes a ton--we freeze the batter in muffin cups and bake them in batches later. half raisins, for my hubby, and half w/o because I HATE raisins.
1 box bran flakes (15 oz...except I can only find 17-oz boxes so I just guess)
5 cups flour (we use at least 3 cups whole wheat flour)
2 1/2 cups sugar
5 tsp. baking soda
2 tsp. salt
1 Tbsp. + 1 tsp. cinnamon (at least)
1 quart buttermilk...shoot, didn't think this with the dairy thing...
4 eggs
1 cup oil (I tried replacing this with 1 c. applesauce and can't recommend it--the texture was off. last time I did 3/4 oil and 1/4 applesauce and that was fine. might try 1/2 and 1/2 next time.)
3/4 cup wheat germ
raisins, optional
Mix dry ingredients in enormous bowl (sadly I cannot use my KitchenAid for these), then add wet ingredients. Bake at 400* for 15 minutes. Makes about 4 dozen or so.

Here's the recipe for "Cheesy Egg Puffs":
Saute:
8 oz. mushrooms, sliced
4 green onions, chopped
1 T. butter
Mix in large bowl:
1/2 c. flour
1 t. baking powder
1/2 t. salt
Combine:
10 lightly beaten eggs
4 c. shredded Monterey Jack cheese
2 c. small curd cottage cheese
Melt 1/2 c. butter/marg. into cheese/egg mixture. Stir this into dry ingredients along with mushroom mixture. Fill greased muffin cups 3/4 full. Bake at 350 for 35-40 min. or until knife inserted comes out clean. Allow to sit for 5-10 minutes. Run knife around edge of muffin cups before removing. ENJOY.
Makes 2.5 dozen and can be frozen.
Here's my Sausage and Cheese Breakfast Muffins from the South Beach Diet. You could omit the cheese.
4 oz. sausage
1/2 green bell pepper, chopped
1/4 onion, chopped
5 large eggs
1 can (12 oz. sliced) mushrooms, drained
1/2 cup (2 oz.) shredded reduced-fat cheddar cheese
Preheat the oven to 350. Coat a 6 cup nonstick muffin pan with cooking spray or line with paper baking cups (this works better, I think).
In a medium nonstick skillet over medium-high heat, cook the sausage, pepper, and onion for 5 minutes, or until sausage is cooked. Spoon mixture into a bowl and cool slightly. Stir in the eggs, cheese, and mushrooms. Evenly divide the mixture among the prepared muffin cups.
Bake for 20 minutes or until the eggs is set.
I have blueberry scones on my website awhile back it is under reicpes category. They are very easy and super yummy.
